Lilly Pad Pancakes...

For lunch today I made Elsie some Lilly Pad Pancakes...and she loved them...she ate 2 of them!

* 1 1/2cups frozen peas
* 2 Tbsp water
* 1 egg
* 3 Tbsp flour

* 1/8 tsp baking powder
* 1/4 tsp salt
* Oil for flying
~ Puree flour,peas,salt and powder~ add a few more peas to make slightly chunky
~ Place 2 Tbsp oil in pan and warm over med. heat
~ drop 1 Tbsp batter in warm oil and fry until golden, flip and fry other side.
~can dip in butter or plain yogurt...Elsie used ketchup and ranch!

These taste very good...and healthy! You can also add bits of cooked chicken or other veggies like corn. This is something we will be making again!

Interesting! What a sneaky way to get little kids to eat their veggies! Glad she liked them.

(Did you make a mistake in the recipe --- does it call for powder? How much? Or is it a typo?)

Love the color of those Lilly-Pad pancakes, too!
