Black Bean Soup

Black Bean soup...so yummy! Elsie and I enjoyed it...Jon tried it but didn't like it to much. He had left-over chicken and potatoes. We froze the left-over soup for a rainy day...
Elsie loved it!
The Recipe: Black Bean Soup
*2 c Black Beans...soak overnight or boil 1 min and soak 1 hour
*6 cups chicken broth
~Boil beans and broth together...simmer 1-2 hours until beans are tender
* 2 Tbsp Butter
* 1 Cup chopped Onion
* 1 Cup shredded carrot
* 1 cup chopped celery
*1/2 cup jalapeno (I did not add)
** I also added sweet potato zucchini and garlic
~Saute together until soft and add to beans and broth
now add:
1 tsp Oregano
1 bay leaf
3 Tbsp lemon juice
1 med. shredded potato
splash red wine (I did not add...and it tasted fine)
~ Simmer 1 hour and add salt and pepper to taste.
~Enjoy!
